Pictured above: comrade Amir Khan and I eating at a local restaurant in Changsha, Hunan Province at the start of our big 2025 Red Tour (series link in my libraries below). Its name is Bright Skull and well-known for home-cooked food. Hunan native Mao Zedong would approve. Healthy, delicious and in this part of China, fiery spicy, which is great medicine for the heart, circulatory system and a great excuse to drink ice-cold beer!

My comments

Evelyne and I are very lucky, food-wise, to live in China. Like all native cuisines, when one goes to a restaurant in another part of the world, it is just not the same as local cooking in-country.

She is a professional-level French cook – not pathetic, over-priced nouvelle cuisine, which is all flashy marketing, presentation and microscopic portions – she makes sumptuous, traditional Norman and Ardennais home-cooked meals that leave you very satisfied. Thus, we eat French at home and Chinese when we go out.

As a result, we get to savor two of humanity’s great cuisines on a daily basis: French and Chinese. They have profoundly influenced many other world cultures over the centuries. For me, the three other great global cuisines are Indian, Latino-Iberian and Italian – in no particular order – which have also had huge impacts of their own. I call them the Five Queens of World Cuisine. We love them all, as well as the other national and regional cuisines that they have influenced across the planet.

France’s shining star is its incredible variety of regional cuisines. First, it’s the bread basket of Europe. No other European country has its variety of climates, fruits, vegetables, meats and dairy. North to south, east to west, the Atlantic Ocean, Mediterranean Sea, and the nexus of these regions makes for an endless choice of cook books. Not to mention, there is no other cuisine that so brilliantly harmonizes eggs, a thousand different kinds of cheese, milk, butter and cream – be it soups, salads, hot and cold dishes, sauces, baked goods, along with endless yummy desserts.

We are very fortunate that the French supermarket Carrefour has a big presence in China, including our small city. They stock hundreds of French items and have an excellent bakery offering authentic baguettes, croissants and a variety of other breads. On Taiwan Island and the Mainland, we are always amazed at the number of French bakeries, even in lower-tier cities. Chinese love French-style baked goods, pastries, and Vietnam is famous for it.

The video below is 30 minutes. If you cook, it is well worth watching. Be sure to have pencil and paper handy to take notes. The many tips are very useful.

BON APPÉTIT!

Thanks to my good friend and comrade, China Writer Wei Ling Chua (https://www.amazon.com/stores/Wei-Ling-Chua/author/B00G3SWQZ0) for finding this report and making comments

Another example of Western food industry’s smear campaigns ‼️ No wonder Westerners are so comparatively unhealthy…
